云南过桥米线是云南滇南地区特有的小吃,它起源于蒙自地区。
Crossing-the-bridge noodles is a rice noodle soup from Yunnan province, China. It is one of the most well-known dishes in Yunnan cuisine, it originated from Mengzi county of Yunnan province.

过桥米线汤是用大骨、老母鸡、云南宣威火腿经长时间熬制而成。
Cross Bridge Rice Noodles soup is made of pork chop, chicken and Xuanwei ham for hours.

过桥米线有四部分组成:一是汤料覆盖有一层滚油
Cross Bridge Rice Noodles is made up of four components, first component is the soup covered by a layer of oil.

二是佐料,有油辣椒、味精、胡椒、盐;三是主料,有生的猪里脊片、鸡胸脯肉片、乌鱼片,以及用水过五熟的猪腰片、堵头片、水发鱼片
Second component is seasonings which is hot pepper oil, aginomoto, pepper and salt. The third component is main ingredient which is pork slices, chicken slices and filet.

辅料有豌豆尖、韭菜、芫荽、葱丝、草芽丝、姜丝、玉兰片、豆腐皮;四是主食,即用水略烫过的米线
Supplementary material is made up of peas, chives, sliced scallion, coriander, shredded ginger and thin sheets of been curd. Four component is staple food which is rice noodles.

有多种说法,一种说法是妻子为丈夫送米线时要过一座桥。因此当丈夫问妻子这种新奇的吃法叫什么名字时,妻子临时杜撰为“过桥米线”。另一种说法认为这个名字来自于米线的吃法。由于要把新鲜米线从一个碗挑到另一个装满汤料的碗内,其过程类似一桥飞渡两碗间,因此谓之为“过桥米线”。还有一种说法称妻子在过桥给丈夫送饭时摔了一跤,其篮子里带的热肉汤不慎泼入碗中的生肉里。后来打开一看发现肉已经烫熟,而且味道鲜美。因起源于过桥摔一跤,于是这种吃法的米线便得名为过桥米线。




One story of origin that has gained traction begins with a scholar who was studying hard for his imperial exams on a small island. His wife, who would bring him food, found that by the time she had crossed the bridge to the island the soup would be cold and the noodles were soggy. She then decided to load a large earthen pot with boiling broth with a layer of oil on top that would act as insulation and keep the broth warm. The noodles and other ingredients were kept in separate container, and when she arrived, she mixed the two containers together for a warm soup.
